As vegetarians, it can be easy to get tired of the same food routine. As Vegiholics, we aim to never let that happen! We got a little quinoa-ed out this year so we sought out farro and found it it’s actually even BETTER!
Farro is an imuunity boosting wheat grain is nearly fat free and 100% cholesterol free. With the winter months just ahead, it’s important to keep your immune system strong to fight germs and viruses. Adding farro to your diet will do just that! It is an excellent source of ZINC, MAGNESIUM, VITAMIN B3, IRON, FIBER AND PROTEIN! Zinc is extremely beneficial during cold season and aids in healing wounds but it also assists in breaking down carbs during digestion.
To complete this too-good-for-you salad, we added:
Cucumbers – Hydration! Cucs are full of bone-building manganese (as well as potassium/magnesium which are great for heart health).
Heirloom Tomatoes – It may be a night-shade but they are one of the healthiest foods on earth! High in Vitamins A, C, K, potassium and they less acidic than most tomatoes!
Avocado – We ALL know avocados have an insane amount of benefits. Do I really need to list them? Bottom line: They contain heart-healthy fat which makes avocados bomb for your hair, skin and nails. We’re in!
The Vegiholic Meyer Lemon Vinaigrette is made primarily with coconut nectar and Meyer lemons. Coconut nectar is sap from the coconut tree once tapped. It is an excellent vegan substitute for honey and is low glycemic (good for diabetics). Coconut nectar contains 17 amino acids, vitamin C, and B vitamins (like, all of the B’s). Meyer lemons are sweeter than your common, boring lemon so we definitely recommend using Meyer lemons. If you can’t find them or don’t have them just use your basic bitch lemon and add a tad more nectar. Feel free to whisk by hand or throw your ingredients in your bullet.
To save time, cut your vegetables while boiling the water for your farro!
**Wine Recommendation: My fave! A nice, crisp New Zealand Sauvignon Blanc**
