When you thought by being a Vegiholic you couldn’t have French Onion Soup (that actually TASTES like French Onion Soup), you were wrong. Proof? We even fooled a meat-eater. For your next dinner party, create this appetizer and watch your guests question if you are still a vegetarian.
The primary ingredient in French Onion Soup is typically beef stock, but not this one – we’ve finally figured it out! Our soup is made with a mushroom stock and caramelized onions. If you want to really mimic the standard soup (and its rich, dark color), sauté mushrooms first then add to your stock.
Because you are creating a homemade stock, this dish does take some time but it’s SO worth it. You can have the onions caramelizing while making the stock to save a bit of time BUT if you have extra time, the longer you simmer the stock the more intense the flavor will be. Like I always say, pour yourself a glass of wine and throw on some tunes!
Waste not: If you have any extra scraps of ANY vegetable you have laying around, add those to your stock as well!
Bonus: You can go vegan by making a cashew cheese rather than the gruyere! Use gluten-free bread if you are GF.
