Whether or not you believe the hype that “breakfast is the most important meal of the day”, it just IS. How you start your day can set the mood for your day.It’s no secret that I LOVE broccoli for breakfast (read here). I’m also a fan of eggs in the morning but my stomach handles them much better when they are boiled. This Breakfast Bowl is an excellent option for sensitive stomachs! My boyfriend, Carter, has an extremely sensitive stomach so cooking for him can be somewhat… tricky, especially in the morning. (That is how and why I came up with this dish!) We’ve found that this combo of healthy ingredients is one of the ONLY meals he can eat in the morning without reprecussions. Our Breakfast Bowl is light, fresh, and filling with ZERO oil or butter.
There are many discussions about “which meal is the most important?” or “is one meal really more important than another?”. I stand by my statement: Breakfast JUST IS that crucial. After fasting all night, a healthy breakfast raises your blood glucose (blood sugar) and gives you energy to start a productive day.
The combination of lightly steamed vegetables, fresh tomatoes, boiled egg and steamed lentils will leave you feeling satisfied but not “food baby” full. Lentils are a legume. They are PACKED with fiber and protein and are also a great source of iron for vegetarians! (I prefer to use the Trader Joe’s brand of pre-steamed lentils and heat them for 2-3 minutes.) Toss these tasty items together over a bed of spinach, with a squeeze of lemon and a pinch of salt/pepper and you’ll never turn back.
For PERFECTLY BOILED EGGS:
- Bring water to a boil
- Carefully place eggs in water and boil for 12 minutes
- Discard hot water and rinse in cold water
Bonus: Gluten-free! I love to add fat-free feta cheese to quench my cheese craving (you know cheese IS an opiate, right?!). Feel free to opt out of adding the feta and this dish is perfect for lactose-intolerance diets. This meal only takes a quick 20 minutes total but if you wake up starvation-nation, snack on an apple while you create!
