While in the midst of winter, it’s easy to get tired of warm, comfort foods. I find myself craving the hot, summer sun and the cold, crisp dishes that accompany it. Good news: You don’t have to wait for summertime to enjoy these savory salads! I love a good fruit & cheese plate but I’m also a slave to salads. Combining the two was never my jam until I really gave it a whirl. When you take a chance on pairing a green base with the right fruit flavors/textures, you’ll get an insanely delectable (and colorful) twist on your standard salad. Don’t be afraid to get jazzy!
The beauty of these salads is the contrast of crunchy, juicy, tart and tangy. Adding fruit to your salad is also a great way to add natural sugar to your diet. Keep it simple over a bed of spinach or mixed greens. (Stay away from a bitter arugula or water-filled romaine.) We recommend DRIZZLING a light vinegarette over top because a heavy, creamy dressing with fruit does not fly. Don’t worry, you’ll get a melt-in-your-mouth sensation from the accent of cheese.
Strawberry, Asparagus & Goat Cheese:
Pairing asparagus with strawberries might seem strange but the contrast is what makes it so delicious. White asparagus has a more delicate flavor than green asparagus (but they both go well!). When sautéing the thicker white asparagus, be sure to cook all the way through and shave a hint of the raw over top. Crumbled goat cheese is an excellent sidekick to a sweet, juicy strawberry.
Apple, Fennel & Blue Cheese:
The crisp, tart flavor of the Pink Lady apple (my favorite!) blends brilliantly with tangy blue cheese, like Stilton cheese. The hint of fennel’s mild, licorice taste is the perfect accent when shaved over top.
Watermelon, Heirloom Tomato & Feta:
My personal go-to and the lighter combination of our dishes. Watermelon is hydrating and refreshing – like sweet water. Heirloom tomatoes are less acidic and have a slight earthier flavor than common red tomatoes. These two ingredients pair wonderfully with a slightly salty/tangy feta cheese. These three contrasting textures are a match made in salad heaven.
