All hail (a spin on) Caesar! This is a fun vegetarian twist on the standard caesar dressing. (Remember: NO ANCHOVIES) The problem for vegetarians is that the anchovy paste used in caesar dressing immediately puts it on our “NO GO” list. With a food processor and ingredients you (most likely) already have in your fridge, you can create a healthy, vegetarian friendly spread. This dose of deliciousness can be used on my Greek Cucumber Boat or use pita chips to dip! It can also be used as a thicker dressing, just be sure not to mix in too generously.
I chose to use Parmesan cheese and my processor but you can absolutely substitute whisking the entire recipe and use two eggs instead of the Parmesan.
