Cauliflower ‘steaks’ are an easy and delicious main dish that requires minimal prep. Serve with a small side of angel hair or lentils for a vegetarian entree that will have those meat-eaters drooling with envy! They can also be served as a family-style shared appetizer.
When seasoning, I prefer Himalayan salt for it’s added mineral benefits. It’s also lower in sodium and, c’mon, it’s PINK! I LOVE serving them with my homemade pesto recipe but feel free to play around with flavor options OR serve sans sauce!
Wine Recommendations: I’m a Sauvignon Blanc freak and truly feel that it goes with everything, especially this dish. The grapefruit and grassy notes are on the money. I decided to not be so basic and try it with a fruity (non-oaky) Chardonnay, like Stags’ Leap Chardonnay. The aroma of lemon zest, peach and pear blended with the citrus taste really helped balance the herb flavor of the pesto. Enjoy!
